5 incredible breakfast suggestions you can make for your mum on Mother's Day

Eggs Benedict - A classic breakfast that is perfect for a special occasion like Mother's Day. Toast a muffin or a Blaa would be ideal, top with bacon, poached eggs, and hollandaise sauce. Optional: add a side of sautéed asparagus or spinach.

Blueberry Pancakes - Who doesn't love pancakes? Make a batch of fluffy pancakes with fresh blueberries, and serve with whipped cream and maple syrup. Sprinkle some grated chocolate on top for an extra touch of decadence to really spoil your mum. She’ll love you for this one!

Avocado Toast – This is a healthy and delicious breakfast option that is super easy to make. Toast some bread, spread mashed avocado on top, and add toppings like sliced tomatoes or a poached egg and smoked salmon with a sprinkle of salt and pepper.

Scrambled Eggs - For a savoury breakfast option, make scrambled eggs and toast some sourdough or wholegrain bread. You can also serve with a side of sauteed mushrooms and cherry tomatoes to make it more tasty and filling.

French Toast - Often served as a special treat for breakfast on special occasions or weekend brunch. French Toast is made by dipping slices of bread in an egg and milk mixture and then frying them in butter until golden brown. The result is a warm and crispy exterior with a soft and fluffy interior. Serve with a variety of toppings, such as fresh fruit, whipped cream, maple syrup or honey and if you’re a chocolate lover like me, add some chocolate. I grate one of my Déise Delights.....incredible!
